Peach Mousse Cake. I will be showing how to make this delicious and easy to make mousse cake that is flavoured with peaches.
There are 3 parts. First is cake sponge, 2nd is meringue, 3rd is the mousse.
This will definitely be a favourite with your kids.

Instructions
Sponge Cake
1. Mix Cake Flour, Corn Starch, Baking Powder and Salt in a bowl. Sift the mixture
2. In a bowl, whisk Egg yolk, 1/3 Sugar, Vanilla Extract & Melted Butter.
3. Meringue, in a bowl use hand mixer to mix egg white until foamy.
4. Add Cream Of tar tart. Mix a while. Add Sugar in 3 Batches. Mix until stiff peak.
5. Scoop 1/3 of meringue and mix with egg yolk mix.
6. Mix in this order, Egg yolk mix, Follow by Flour Mix into Meringue.
7. Bake in Oven for 10-15 mins at 180°C
Mousse
8. Use hand mixer. Mix whipping cream to stiff peak
9. Add Water to Gelatin and bloom 5 mins. Than heat up to turn liquid state.
10. Blend 3 halves peaches to get puree
11. Mix gelatine with peach puree.
12. Mix peach puree with whipping cream
Assemble.
13.Slice sponge cake in 2 pieces Cover the cake with cake collar.
14. Bottom to Top. Layer 1 - Cake, Layer 2 - Mousse, Layer 3 - Cake , Layer 4 Mousse.
15. Dip Layer 1 & 2 with sugar syrup
16. Keep in fridge for 2 hours for the mousse to set.
Store in fridge.

Whip Cream 200g

Water 60g
Peaches 4 halves
Sugar Syrup 20g
